Green cardamom grows in the shade of Kerala's highlands — not planted in rows but nestled beneath forest canopy at elevations most farmers avoid. The Malabar variety grown in Idukki district requires this altitude. It produces the complex volatiles — the eucalyptol, the linalool — that make this spice irreplaceable in both kitchen and medicine.

Each pod is harvested by hand, before it splits. A split pod means the seeds have begun to oxidize and the essential oils have already begun their departure. Our farmers hold the line here. They wait for the perfect moment, then cut each cluster by hand.
