Most cinnamon sold in the United States is not cinnamon. It is cassia — a related but distinct bark with higher coumarin content and a harsher, louder flavor. True cinnamon, Cinnamomum verum, is something else entirely: thin, brittle, layered quills with a complex sweetness that doesn't overwhelm.
Our cinnamon is grown and sourced from Kerala, where the climate supports the Ceylon variety's distinctive delicacy. The bark is stripped, rolled by hand, and dried carefully to preserve its fragile aromatics.
